Marlu's Diner: Greaseless Bulalo

The story of Marlu's Diner started when its owner became restless with his job and quit. He decided to travel for a year right after. Eventually, he started to explore his career options again. An idea came when he chanced upon a commercial space in Lavanya Complex, General Trias, Cavite while visiting his family. He loves food, enjoys eating, and definitely knows how to cook! Setting up a diner naturally felt right. They mainly serve Filipino dishes.

This small eatery is popularly being known for it's "Greaseless Bulalo", a Filipino dish cooked with beef shanks and bone marrows. Yes, you will NOT find grease or "sebo" in their Bulalo even when it cools down! What can you say about that? Not only is it healthy, you can enjoy eating your Bulalo without being pressured of letting it stay as hot as possible. This is probably the ultimate reason why people are coming back for more of Marlu's Bulalo!

Their Bulalo will always have tender beef shanks and mouthwatering stew. It is served on a clay pot while still very hot to further tease your appetite. As the Filipino saying goes, "Sabaw palang, ulam na!". This is absolutely a must-try when you visit Marlu's Diner.

Aside from Bulalo, they also offer a good variety of Filipino dishes. On my several visits to the diner, I was able to try these:

And this one is becoming a personal favorite -- Chicken Binakol!

I mentioned in a previous post that a friend let me try Chicken Binakol when I was in Iloilo last year for the Dinagyang Festival. It was really delectable. You can rarely find an Ilonggo restaurant in Metro Manila and I was really glad when this dish made it on their menu. Chicken Binakol is similar to "Tinolang Manok" (Chicken Ginger Stew), but it is cooked using coconut flesh and juice. The coconut adds sweetness to the stew that makes it even more flavorful. Another must-try!

Equally important to delicious food is customer service and ambiance.

Marlu's Diner can accommodate approximately 30 people. It is managed and closely monitored by mostly family members. This being said, you can expect a friendly/accommodating atmosphere and great customer service. The place is kept clean all the time, including all the the wares and utensils. This resto may appear simple. But it has its own sense of style with the details you can find within the diner.

If you are a big group, you may call them ahead of time to place your order or to make reservations. This would cut short your waiting time. They also accept receptions for various occasions like weddings, birthdays, and baptisms. Just ask them for a menu proposal to match your budget.

They can also arrange your meal in a "Boodle Fight" style. Diners just have to call in advance and request what type of food they want to be included in the set meal.

And here's something really interesting to cap this review. One of the family members running Marlu's Diner found an ingenious way of using the "sebo" they have taken out from every Bulalo they serve. She made candles out of the grease! Take a look:

Currently, these are not for sale. But whenever they have some, they give them as gifts to customers. The candle can last for approximately 3 days and surprisingly, and it does not have a foul odor.
